in the UK

When you savour WASHOKU, you are enjoying a Japanese cultural experience beyond food.  Tableware, seasonality, hospitality, the style of eating, and the dining environment are all essential features of WASHOKU.
 
Our aim is to promote an understanding of Japanese culinary culture in the UK by cooking, tasting, and learning about Japanese food.  It is not just about Sushi.  We will prepare a variety of traditional dishes – soup, rice, and drinks, in addition to steamed, fried, pickled, marinated, and sautéed dishes.  Featuring the best of British ingredients, we will experiment with what is locally available by applying Japanese traditional culinary techniques. 
 
Through these activities, we also aim to learn how food travels across borders or how culinary culture is transmitted and transformed in a rapidly globalizing world.  
With four top chefs from Kobe, Japan, we are introducing traditional Japanese food.  Japanese food is not just Sushi. Recently recognized by UNESCO as “world intangible cultural heritage,” Japanese food is rich in tradition and variety. Using local British ingredients, what kinds of traditional Japanese dishes can be prepared?
Our chefs will show you their culinary creativity and Japanese cookery techniques, while sharing stories about what traditional Japanese food is and what it means to them. 
 
神戸から日本の一流シェフが伝統的な日本食を紹介しにやってくる。日本食は寿司だけではない。近日ユネスコに無形文化遺産として登録された日本食は伝統的に豊かでバラエティに富んでいる。イギリスの地元の食材を使用してどのような和食が振舞わられるのか?
料理人たちは「伝統的な日本食とは何か」「彼らにとって伝統的な日本食の意味は」といった問いを通して、彼らの料理創作意欲と調理技術を伝えることであろう。
